Easy coconut macaroons


These are so quick and easy to make! I used:

2 free range eggs
225g (8oz) desiccated coconut
150g (5oz) caster sugar
glace cherries to decorate (optional)

Mix together the coconut, sugar and (whisked) eggs. You might think there isn't enough liquid to bind it together, but just keep mixing and it will come together. Run your hands under the cold tap to avoid the mixture getting stuck to them too much and roll the mixture into balls. Baked on a greased tray or on greasproof paper, whichever you would prefer to stop them sticking. Cut glace cherries in half and place them on top (optional) and bake on gas mark 4 for 25-30 mins or until they look a nice golden colour. If you like coconut (which I personally do), you will love these!
